This room is just (2-A) type and only for two pax.
There is an overbooking which is highlighted. I wanted this to continue and show it like this to the assignment page.
BUT when it comes to the clients page I wanted it to be cut like the 2nd part of the photo.
Is there a possibility to make it like this?

Unfortunately there is no in-built possibility to cut event when you create a new one.
I will try to provide you with an alternative solution.
There is collision extension in Scheduler https://docs.dhtmlx.com/scheduler/collisions.html
You can use it to limit the count of events per time slot. Please check the demo that demonstrates how it works in the Timeline view:
