Is it possible to use the Skin Builder to create a new color scheme for the Scheduler?

If not, are there any other ways to do this?

yep, you can use SkinBuilder
dhtmlx.com/docs/products/dhtmlxS … ndex.shtml
or you can just create a custom css files and alter necessary css rules.
